Chicken soup and biscuits



This was an easy dinner to whip up. Thanks to the fact I had cooked up about 6 chicken breasts a couple of days before this meal.
Chicken soup:
½-¾c. Chicken broth
2-3 c. water
1 pkg. low-sodium chicken boullion
approx. 1 c. cut up cooked chicken
2 stalks of celery, cut up
2 carrots, cut up
1-2 cloves garlic, minced
¾-1c. instant brown rice
Salt and pepper, to taste ( I don't put salt in mine)
Put everything except rice into a lge. pot. Let simmer for approx. 20 mins. Add rice, and let simmer for 10 mins, or until preferred tenderness of rice.

Rice MIlk does a body good

I thought I would try another recipe. This time for rice milk.
I used twice the amount of rice as to what the recipe called for. Next time I will use the amount the recipe calls for. I added the vanilla and 2 tsp. of blue agave syrup.

Now I don't drink this as is, I add it to my morning smoothie!

Breakfast for Dinner


One of my kids favourites is pancakes and especially pancakes for dinner.
I usually make extras for popping in the toaster or microwave for breakfast and snacks, if they last that long!
Last night pancakes were organic pancake mix, ground flax, eggs, melted Becel (olive oil spread), oat milk, mashed banana and oh so yummy dark choc. chips!
Make your own oat milk
Fill a large jug with one-third oats and two-thirds water. Mix, and leave overnight. The next morning, sieve the mixture and you will be left with a milky liquid that can be drunk as it is or used in place of cow's milk in some recipes."

Holy Grocery Haul Batman!













After reading a post on my friend Shelly's blog about her grocery haul I thought I would share mine.

It is quite the haul and the lineups for checking were long today!

I had to take 2 pics to get it all in.
Dairy: 1% milk, kefir, reduced fat soy milk
Grains: Natural peanut butter, whole wheat soy bread, quinoa, ground flax seed, organic corn puffs, organic frosted flakes, flax spaghettini, whole wheat wraps.
Meat & Fish: Frozen chicken burgers, frozen tilapia fillets,extra lean ground beef, mild italian turkey sausage, striploin steaks, pork loin chops, ground turkey and boneless, skinless chicken breasts ( I guess I will add the brown eggs into this category.)
Fruits & Veggies: Frozen sweet potato fries, organic frozen potato fries,frozen organic peas,organic russet potatoes, celery, red pepper, english cucumber, purple turnip, zucchini, organic bananas, frozen strawberries, organic apple cinnamon apple sauce (snack size), Frozen 100% juice ( goji mixed berry the other 100% juice is mango orange passion)
Other: Fair trade coffee, Riceworks parmesan sundried tomato brown rice chips, Organic salt & pepper potato chips, Kettle Buffalo Bleu potato chips, Whole Blue Agave Syrup, Organic Apple Butter some Knudsen Spritzers in various flavours and I could not forget Javex free & clear ( bleach for colours).



My hubby had get his Mr. Noodles! What a bad boy!
That and I bought a box of Girl Guide Cookies, I couldn't say no to those cute lil Sparks dressed up in their pink uniforms and okay Girl Guide Cookes!!!!!!

MMMMMM! Cookies!

After a wonderful rest Friday night and no Saturday morning karate for the kids, I got my butt outta bed!
Saturday afternoon and a lil baking was in order.
So I thought some chocolate chip cookies would do the fix.

MMMM! White chocolate chip with cherry flavoured craisins!

Do you want the recipe?


Well here it is:

1c. butter or margarine (at room temp.)
¾c. sugar
¾c. packed brown sugar
2 eggs
2 tsp. vanilla
1c. all purpose flour
1¼c. whole wheat flour
½c. rolled oats
¼c. ground flax seed
1 tsp. baking soda
½tsp. salt
1c. cherry flavoured craisins or orginal
2c. white choc, chips (or dark choc.)

Heat oven to 375°F. Stir flours, oats, flax seed in with baking soda & salt; set aside. In lge. mixer bowl cream butter with sugar, brown sugar, eggs & vanilla. Gradually blend dry mixture into creamed mixture. Stir in craisins and choc. chips. Drop by Tbsp. onto ungreased cookie sheets. Bake for 9-11 mins or until golden brown. Yield: 48 cookies.

This recipe is a makeover of a choc chip cookie that I found on the back of a package of Safeway choc. chips.

Friday night dinner


Friday was a lil hectic! I made my muffins for staff appreciation at my youngest son's school (yummy applesauce muffins!) and supervised school patrols in the morning. I was thankful I only had to work for a few hours.
On my way home from work, my friend and I stopped by Planet Organic market. I picked some dried pineapple, dried apple and roasted cashews. Yummy!
Back home at dinner hour, I was glad there was some left over pork tenderloin. So into the electric skillet it went along with some frozen organic veggies and instant brown rice.
After dinner as hubby and the kids headed off to Wal-mart for their dvd and game fix, I headed to the couch!!!! ZZZZZZZ!

Thursday night dinner



In an attempt to eat healthier and to have some accountablility, I will try and share what I eat.


Thursday night was yummy!

Pork Tenderloin with fresh ground three pepper medley and garlic along with roasted sweet potato, turnip and zucchini.


I have to remember to not roast the zucchini as long as the other veggies or they get too mushy.


I usually eat all my dinner meals on a luncheon size plate. Gotta remember portion size!
